WHAT IS CLOUD BREAD?

Cloud bread is also known as oopsie bread. It is a high-protein, low-carb substitute for regular bread. Eggs, cream cheese, cream of tartar, and just a bit of sweetener or a pinch of salt are the main ingredients. We can make it both sweet and savory.

The absence of traditional flour makes cloud bread gluten-free and low in carbs, which is beneficial for the overall well-being of our body.

Ingredients:

- 3 large eggs, separated
- 3 tablespoons cream cheese, softened
- ¼ teaspoon cream of tartar
- A pinch of salt
- ½ cup shredded mozzarella cheese
- ¼ cup pizza sauce
- Your favorite pizza toppings (I preferred bell peppers, onions, mushrooms, etc..)



Instructions:

1. Preheat the oven to 300°F (150°C) and place parchment paper on a baking pan.


2. Firstly, gently separate the eggs, putting the yolks in one bowl and the whites in another.


3. Add the softened cream cheese to the bowl containing the egg yolks and stir gently until the mixture is smooth and creamy. 


4. Add the cream of tartar and a small teaspoon of salt to the bowl containing the egg whites. Beat the egg whites with a hand mixer or a stand mixer until stiff peaks form. This may take a few minutes, but believe me, it's worth it!


5. Gently whisk the egg yolk mixture into the whipped egg whites, making sure not to deflate the fluffy goodness.


6. After everything is well combined, spoon the dough into small circles, similar to mini pizza crusts, onto the baking sheet that has been prepared.


7. Bake those wonderful bread clouds in the oven for 25 to 30 minutes, or until they are firm and golden brown.


8. Now for the exciting part: decorating your pizzas made of cloud bread! Top each cloud with a dollop of pizza sauce, shredded mozzarella cheese, sliced mushrooms and bell peppers etc.


9. After your pizzas are filled, return them to the oven and bake for more 5 to 10 minutes, or until the cheese is bubbling and melted.

NOTES:

  • Whip the egg whites until stiff peaks form. This step is important for achieving the airy texture of cloud bread. To achieve the highest possible volume, use a clean, dry bowl and beaters.


  • Once the egg whites have been beaten, gently fold in the other ingredients. Avoid overmixing, because it can deflate the airy texture you've worked so hard for. With a spatula and a light hand, mix the ingredients thoroughly yet gently.


  • To achieve the fluffiest results, bake your cloud bread crust low and slow. Keep an eye on it to prevent overbrowning, but don't open the oven door too soon, as this can cause the crust to collapse.


  • Let your cloud bread crust cool completely before adding toppings. This allows it to firm up and keep its shape, ensuring that your pizza slices remain intact when you're ready to dive in.
