There is nothing better than a soft, fluffy, and delicious low-carb keto pancake. The best part is that these gluten-free and low-carb pancakes are made with almond flour and taste just amazing, with a texture on the same level as wheat flour pancakes. The pancakes cook quickly and easily as they’re light, and they just might be my best keto low-carb pancakes ever.

Ingredients:


- 2 large eggs

- 2 oz cream cheese

- 1/2 cup almond flour

- 1/2 tsp baking powder

- 1 tbsp natural sweetener 

- 1/2 tsp vanilla extract

- Pinch of salt

- Butter 

- (Optional : maple syrup)



Instructions:


1. Put eggs, cream cheese, almond flour, baking powder, sweetener, vanilla extract, and a small amount of salt in a blender. Blend till smooth.


2. To let the baking powder to work, let the batter rest for a few minutes.


3. Preheat a griddle or nonstick skillet over medium-low heat. To coat the surface, add a small amount of butter or oil.


4. To make pancakes, pour small amounts of batter onto the skillet. Cook until surface bubbles appear, then turn and continue cooking until golden brown on the other side.


5. Continue until all of the batter is used, glazing the skillet with additional butter or oil as necessary.


6. Top the keto pancakes with whipped cream, fruit, or your maple syrup.
