Ingredients:


- 3 large eggs

- 1/4 cup diced tomatoes

- 2 tbsp chopped spinach

- 2 tbsp feta cheese

- 1 tbsp chopped olives

- 1 tbsp olive oil

- Salt and pepper to taste

- Fresh herbs (optional, for garnish)



Instructions:


1. Whisk the eggs in a bowl and add pepper and salt to taste.


2. In a nonstick pan, heat the olive oil over medium heat.


3. Cook the diced tomatoes for one minute, or until they begin to soften.


4. Cook the chopped spinach in the pan until it wilts.


5. Cover the vegetables in the pan with the whisked eggs.


6. Evenly spread chopped olives and feta cheese on top of the eggs.


7. Let the omelette cook without stirring, using a spatula to lift the edges and let the egg that hasn't cooked through to flow below.


8. After the omelette's sides are set, fold it in half and cook it for a further minute or so, or until the inside is well-cooked.
