- 4 large eggs

- 2 tablespoons milk or cream

Instructions:

4. Push the vegetables to one side of the skillet and fill the empty space with the whisked eggs. Allow them to cook, uncovered, for one or two minutes, or until the edges begin to set.


5. Using a spatula, gently scramble the eggs, add the vegetables as you go.


6. Top the eggs with the crumbled goat cheese after they are almost done but still little runny.


7. Cook for a minute more, or until the cheese has melted and the eggs are fully cooked.
