This is the best keto cloud bread recipe with only 3 ingredients and almost zero carbs. A super simple and delicious recipe takes just 10 minutes to prep. This is one of my favorite bread recipes because it has a soft and fluffy texture, perfect for low-carb pizza and sandwiches as a gluten-free base and cloud bread's neutral flavor profile makes it perfect for both savory and sweet toppings. You can make it as a satisfying breakfast, lunch, or snack.

WHAT IS CLOUD BREAD? 

Cloud bread is also known as oopsie bread. It is a high-protein, low-carb substitute for regular bread. Eggs, cream cheese, cream of tartar, and just a bit of sweetener are the main ingredients. When you mix all these ingredients together and bake them, you get the amazing, cloud-like texture of this bread. Ingredients:


3 large eggs

3 tablespoons cream cheese, softened

¼ teaspoon cream of tartar

Optional: 1 tablespoon low-carb sweetener 



Instructions:


1. Preheat the oven to 300°F (150°C) and place parchment paper on a baking pan.


2. Divide the egg whites and yolks and transfer them to different bowls.



3. Add the softened cream cheese and sweetener (if using) to the bowl containing the egg yolks. Mix until smooth and well combined.

   


4. Pour the cream of tartar into the bowl containing the egg whites. Beat the egg whites with a hand mixer or a stand mixer until stiff peaks form.



5. Carefully, but without deflating the mixture, fold the egg yolk mixture into the beaten egg whites until thoroughly mixed. 



6. Spoon the mixture onto the baking sheet that has been preheated, shaping rounds that are about ½ inch (1 cm) thick and 4 inches (10 cm) in diameter.



7. Bake for 25 to 30 minutes in a preheated oven, or until the cloud bread is firm and lightly brown.



8. Let the cloud bread cool for a few minutes on the baking sheet, then move it to a wire rack to finish cooling.

NOTES:


  • Make sure to whisk the egg whites until they form firm peaks. This step is important to achieving the light and airy texture of cloud bread. 


  • Fold the egg yolk mixture gently into the whipped egg whites. Overmixing can deflate the mixture, that result in denser bread. 


  • The addition of cream of tartar to the egg whites stabilizes them and improves the structure of the bread. Don't skip this item! 


  • Allow the cloud bread to cool on the baking sheet for a few minutes before moving it to a wire rack to finish cooling. This helps prevent the bread from getting soggy.
