IS CARROT GOOD FOR KETO DIET?

Enjoying a small amount of carrot does not break your ketosis. I have used 2 small carrots; it has 20 grams of carbs, and I still call this keto recipe. More than just adding carbs, those two carrots do a lot more. They can add a lovely burst of flavor, as well as color and brightness, to our beef stew. If you don't want carrot you skip or replace it with bell pepper.






HOW TO THICKEN KETO BEEF STEW?

To thicken the stew, we are going to use xanthan gum. It’s easily found at most well-stocked grocery stores, or you can order it from the link given below in ingredients. Xanthan gum sounds a little weird, but it is a popular thickening agent that is a totally low-carb and natural product. It's commonly used in baked goods, salad dressings, and sauces to improve texture and consistency.

Ingredients:

- 1.5 lbs beef stew meat, cut into cubes
- 2 tablespoons olive oil
- 1 onion, diced
- 2 cloves garlic, minced
- 2 cups beef broth
- 1 cup diced tomatoes 
- 1 cup chopped celery
- 1 cup chopped carrots
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- Salt and pepper to taste
- ½ teaspoon xanthan gum (low-carb thickener) 




Instructions:

1. In a large pot, heat up the olive oil over medium heat. Saute the minced garlic and diced onion until they become softened.


2. Add the stew meat of beef in the pot and brown it on all sides.



3. Stir in the chopped tomatoes and beef broth. Stir well to combine.


4. Add to the pot with chopped carrots, dry thyme, and dried rosemary. Add pepper and salt according to taste.



5. Simmer the stew for a short while before turning down the heat and covering it. Allow it cook until the meat is soft and the flavors are well combined, about 1 to 2 hours.


6. Sprinkle with the xanthan gum and whisk well to incorporate.


7. Adjust seasoning according to your taste, then serve hot and enjoy your Keto beef stew!

NOTES:

  • Searing the beef before incorporating it into the stew improves its flavor and results in a rich, caramelized surface.
