Ingredients:
- For the Salad:
- 2 cups cooked chicken breast, chopped or shredded
- 4 large eggs
- 1 cup cherry tomatoes, halved
- 1 avocado, diced
- 1/2 cup crumbled blue cheese
- 1/4 cup red onion, finely chopped
- 5 large lettuce leaves
- For the Dressing:
- 1/4 cup mayonnaise
- 1 tablespoon lemon juice
- 1 teaspoon Dijon mustard
Instructions:
1. Put the eggs in a saucepan and add cold water over them. Heat to a boil on a medium-high heat temperature.
2. After the pan comes to a boil, cover it, turn off the heat, and leave it for 10 to 12 minutes. Place the eggs in an ice bath to cool down. Peel and cut them when they're cool.
3. Season chicken breasts with salt and pepper, if they haven't been cooked yet, and bake or cook them in a skillet until done. After letting it cool, cut or shred it.
4. Combine mayonnaise, lemon juice, Dijon mustard, salt, and pepper in a bowl.
