I started to ignore the creamy, satisfying flavor of broccoli cheddar soup a few months ago. Panera has always been my first choice for this indulgence. Even though Panera's version tasted excellent, I soon discovered that it didn't fit with my new low-carb lifestyle as I dived more into my keto journey.


Finding a keto-friendly substitute, I set out to copy the indulgent, creamy treat in my own kitchen. I made several efforts before I finally came up with a meal that fit my diet rules and satisfied my cravings. It was as flavorful and enjoyable as Panera's, but without the guilt caused by eating so many carbs. 

What a revelation the first spoonful was. I can't wait to share the recipe for my homemade low-carb broccoli cheddar soup with you because it has now become a kitchen staple!

Ingredients:

- 4 cups broccoli florets
- 1 tablespoon butter
- 1 tablespoon olive oil
- 1 medium onion, diced
- 2 cloves garlic, minced
- 4 cups chicken broth
- 1 cup heavy cream
- 2 cups shredded sharp cheddar cheese
- Salt and pepper to taste
- Pinch of nutmeg



Instructions:

1. Simply chop the broccoli into small pieces. Melt the butter and olive oil in a large pot over medium heat.


2. Add the diced onion and cook for about 5 minutes, or until it becomes translucent. Once fragrant, add the minced garlic and cook for an additional one to two minutes. 


3. Transfer the broccoli florets to the pot. Pour in the chicken broth. Bring to a boil, then reduce heat and allow to simmer for 10-15 minutes, or until the broccoli is cooked.


4. Blend the soup with an immersion blender until it's smooth. Only mix a portion of the soup and leave some broccoli florets whole if you like a chunkier texture.


6. Stir in the heavy cream. When the cheddar cheese is melted and the soup is smooth, gradually add the shredded cheese and stir. 


7. Add nutmeg and a pinch of salt and pepper for seasoning. Transfer the soup into bowls and, if preferred, top with extra shredded cheese.

NOTES:

  • To create a deep flavor base, sauté garlic and onions in butter before adding other ingredients.

  • Avoid using flour or cornstarch. Instead, mix some of the cooked broccoli and stock to organically thicken the soup.

  • To avoid clumping or graininess, gradually stir in the shredded cheddar cheese over low heat.

  • With an immersion blender, partially blend the soup, leaving some bits of broccoli for texture.

  • When adding the cheese, keep the heat low to prevent it from separating or curdling.
